I’m back and kickstarting it all with this classic, popular menu. Always home cooked, freshly made and healthy:

Chicken Korma- boneless chicken cooked with spices and yoghurt

Tarka Dhal- red lentils cooked with tomatoes, onion and spices and finished with a spiced temper.

Muttar Pilau - basmati rice with peas AND/OR Naan AND/OR Roti.

..cooking for you next week, so today’s Friday Curry is a special one for my younger son, back from an overnight Bushcraft expedition (menu requested before he left).

Saag Paneer and Prawn Curry (made today with leeks and peppers - I do like to get the veg in!😂). Both his favourite curries (bar Nihari). Although he had also wanted Sardine Pasta and Sushi, but I thought 2 curries was plenty!

What foods would you crave if you returned from an overnight expedition? I think I’d just want my bed🤪😄!

Sharing of a different kind!

Schools and extra curricular activities beginning again? Considering expanding your teenager’s education?

My Duke of Edinburgh Cookery Skills course has been successfully running over the summer with pre-recoded sessions.

You already know that I'm a staunch believer in encouraging those kids who want to learn about cooking, to gain as much knowledge about diverse techniques and flavours as possible! If they can do this as part of their DofE Skills, then even better! Cooking really is a life skill and sometimes, you don't want your parent to teach you (anyone want to teach my youngest??!🤣).

Put them on a course with their peers, where they're part of a community and they’ll be more inclined to learn!

I am now back to holding Live Zoom sessions, so do have a look at my exciting options (link in my bio under DofE tab), for all the details.

Participants have given some lovely feedback and have really enjoyed being introduced to, or their knowledge expanded by, all the various foods they have cooked.

Just choose 1 of the 3 Options offered (including a Plant Based one) for the 3 Month Skills Award or 2 Options with further assessment for the 6 Month Award option.  The flexibility of pre-recorded sessions continues to be available if that would suit you better.

I wasn’t sure this was going to work!

Salmon brushed with soy, piri piri and sprinkled with zataar, then oven roasted until just cooked. Somehow the flavours seemed to marry quite well!

Served with Bulgar and lentil pilaf with lots of onions- a mujadarrah of sorts.

Build on your knowledge, share an experience with friends or family and learn how to inject flavour into food, with techniques that can be applied to all cuisines.

The easiest pasta sauce!

Seriously! I had 5 minutes before I had to leave the house for errands & realised I hadn’t sorted lunch OR done the food shop😱! Rugby practice approaching, so carbs were required!

Assembled & in a cold oven in less than 5 mins & left to cook for an hour. Just boiled water for pasta on my return & used a trusty stick blender for a smooth sauce (though easily could have been left it unblitzed).

This Friday’s Curry

Thai Chicken Red Curry with aubergines, courgettes and mushrooms on jasmine rice. Just for us😛. We have shower tray and tile delays…the fun of home renovations! Not.

Jazzed-up paste out of a tub with fresh kaffir lime leaves, ginger, lemongrass, lime, Thai basil leaves, palm sugar and fish sauce. Makes it all taste a bit brighter!

Another great use of leftover veg! This could so easily have been made without chicken too.

We’ve been watching “Pirates of the Caribbean” 😂. I didn’t know there were so many.. I must have been asleep when films 4 & 5 were out in the cinema😳.

Salmon fishcakes made with both sweet & white potato, green chilli, ginger and coriander. So simple and a happy accident of using up leftovers👍🏼😁.
