I love how when the sky gets a bit brighter, the snow just seems so white! Quite uplifting to see- we were so excited, we ALL ran out and built a dancing snow troop😂 (there’s never this much enthusiasm on display on Sunday mornings!).

Maybe we’re just craving a change of scene in this 3rd Lockdown?😉

This Friday’s Curry - Kare Masala Ghosht (lamb c

This Friday’s Curry - Kare Masala Ghosht (lamb cooked in whole spices), Aloo Muttar (pea and potato curry), served here with Subzi Pilau (spiced rice with vegetables).

Rich lamb with a burnished red colour colour, thanks to the whole red Kashmiri chillies. Such depth of flavour and a great contrast to the lighter, fresher Aloo Muttar.

Polvorones!

Here’s the much requested recipe- perfect for a Sunday bake as they come together very easily! The method will go up in my stories and will be saved to my highlights.

- 400g plain flour
- 100g ground almonds
- 200g Extra Virgin Olive Oil (I used a fruity one, as opposed to a grassy one)
- 170g icing sugar
- 1/2 tsp cinnamon powder

Polvorones..

OMGoodness! I shouldn’t even mention how many of these I’ve eaten already😳.

We were given a box of authentic Spanish ones for Christmas, beautifully wrapped and made from pistachios and olive oil. Festive Spanish delicacies that were pure crumbly, melt-in-the-mouth yumminess.

We’d been eeking these out and I felt a great loss when the final wrapper went in the bin, especially as I’d been sacrificing my share for others!

I just had to make them, though used ground almonds (also authentic) and stuck with olive oil (lard is traditional, but we don’t eat it).

Relatively easy to make, though it’s a very delicate dough to work with.

🎶 “Soup, soup, that tasty soup, soup. Tasty Carrot and Coriander...Salmon Chowder... Miso miso!!” 🎶

Does anyone remember this song from a UK ad in the early 90s?? If not, you’ll probably think I’ve gone a bit mad!!🤣

Anyway, Broccolli and Stilton soup here. Very quick and easy- 15 mins max incl prep👊🏼

Boil 1 cut up broccoli🥦 head (trimmed stalks too) in enough stock (chicken, lamb, veg- fresh or from a cube) to cover.
Add 1/2 tsp garlic granules, several twists of black pepper and pinch of salt.
Boil until tender (approx 8 mins), then blitz with hand blender or in a blender to your preferred consistency. Taste & season as necessary.
Crumble in a handful of Stilton or any other cheese you like (or omit entirely!).
Croutons are nice too (I ran out of time).

500g granulated sugar
Juice of a small lemon (approx 1.5 tbsp)
Pinch of ground cardamom

The rest of the blueberries went into blueberry muffins. Online schooling means readily available food..😉

Wow, the last day of 2020 tomorrow.

So much distress and sadness felt by many this year. My heart goes out to you🙁.

There have been so many positives too though - humanity pulling together, people’s open-heartedness, kindness to others, the generosity of spirit and a general sense of community. 🤗

I’ve learnt a lot about myself this year too and, most importantly, I’ve been lucky enough to be able to adapt - I’ve ventured into unknown territory (both personal and business) and experienced pastures new. It wasn’t all easy, but I didn’t sink 😂.

For this, I thank you all. You really kept me going and gave me focus.

May next year bring brighter horizons and a better life for everyone.

Hope everyone had a wonderful Christmas and enjoyed all they had?

I’ve appreciated a little social media break- I didn’t even take any photos of our meal, as beautiful as it was, the garlic & rosemary roast lamb, roasties, brussels, yorkies, carrots, parsnips, cauliflower, broccoli & gravy. Puddings went on for a few days; tiramisu & creme brûlée (basically everything the boys liked, which we all made). Xmas pudding and Christmas cake still survive.😁

We’ve just come back from a rather fresh walk in what feels like -3c❄️❄️ Time for a chai masala hot chocolate made with almond milk and a slice of Christmas cake whilst settling down to watch “Murder on the Nile”.

What to do with a variety of leftovers?

A quick and easy stir fried rice!

-Heat some chilli oil/sambal olek/crispy chilli with some oil in a frying pan
- Add leftover veg to heat through (&/or meat)
- Add leftover gravy until it’s bubbling nicely
- Add in leftover rice (whatever kind- I used some muttar pilau) and stir to heat through fully
- Then add some shakes of soy sauce (and some more chilli oil/sambal olek etc to your taste).

So. Simple.

It will make you feel virtuous...and certainly warm you through!

Winter Foods- comforting slow cooked pomegranate molasses, chilli and orange beef shin stew, served with sweet potato mash and simple steamed beans.

Deeply flavoured, succulent and falling off the bone beef shin😋. All it needs is 4/5 hours in the oven (doing its thang!) and some simply cooked veg on the side.
