Learn to cook an selection of dhaals from different regions of the Indian Sub-Continent, each requiring different skills and techniques. Really appreciate how each dish will taste so completely different to the next, depending on the raw ingredients and the spice combination applied, as well as gaining an understanding of the importance of different textures.
